In the US, cancer is the second leading cause of death.
Epidemiological studies show that a diet
consisting of mostly plant sources reduces the incidence
of breast, colon, and prostate cancers.
The American Cancer Society has outlined
guidelines for reducing the risk of cancer.
These include choosing foods from a plant source
and limiting high-fat foods from animal sources.
Soybeans fit these guidelines for a healthy diet.
Soybeans are low in saturated fat and free of cholesterol, but rich in
high quality protein. Thus, soy makes an excellent meat
substitute in our diets.
Studies show that soybean contains five anti-cancerous
agents. These
agents act to reduce certain estrogen-stimulated
cancers. Further
studies are now underway.
As little as one serving a day of soy foods may be
enough to protect against the risk of breast, colon,
lung, rectal, stomach, and prostate cancer.
Common soy protein can be found in:
-Soybeans
-Tofu
-Soymilk
-Baked
goods (breads, cookies, crackers)
-Soy-fortified
Pasta (15-17% soy protein content)
-Cereals
-Some
veggie burgers

of recipes using soybean as one of the main ingredients.
